Be sure you're on the latest version of zoom (5.4.7 as of this article)

Enable the zoom buttons:

go to:

https://washington.zoom.us/profile/setting 

and enable two switches as well as the a checkbox:

Then when you're in the meeting click "Live Transcript" and "Enable Auto-Transcription"

You should see text as you and others in the meeting speak!
